- All-purpose flour: 2 cups
- Egg: 1 piece
- Lemon juice: 1 teaspoon
- Flour: 2 tablespoons
- Water
- Bread crumbs
- Oil for deep frying: 1.5 cups
Direction
Part 1: Marinate the Chicken
- Cut the chicken into small pieces.

- It’s time to marinate the chicken. Add ½ teaspoon of salt, garlic paste, ginger paste, chili powder, garam masala powder, soya sauce, and cumin powder to the chicken.

- Mix all the ingredients with the chicken pieces. Marinate for 30 minutes or or even longer if you can wait, to let all those delicious flavors meld and intensify.

Part 2: Prepare the Chicken Filling
- Add 2 tablespoons of oil in a hot pan. Once the oil is hot, add the marinated chicken.

- Saute the chicken for 10 minutes on high-medium heat. The aroma will be irresistible by this time!

- Add 1.5 cups of onion slices to the chicken. After a couple of minutes, add 2-3 chopped green chillies to the chicken for that extra kick of spice.

- Let them cook and blend the flavours perfectly. Meanwhile, you make cornflour paste to save time.
- Take 1 tablespoon of cornflour in a bowl. Add half a cup of water to the flour and make a liquid paste.

- Now, pour the paste into the chicken and cook for 3 more minutes until everything is nicely thickened.

- Allow the filling to cool before proceeding to the next steps. It will let all the flavours meld together perfectly, so, the wait will be worth it!

Part 3: Prepare the Batter
- Take a large bowl and add 2 cups of all-purpose flour to it. Now, add 1 teaspoon of salt, 1 piece of egg, 1 teaspoon of lemon juice, and 3 cups of water to the flour.

- Mix all the ingredients until you have a smooth, well-blended batter.

- Next, transfer a portion of the batter to another bowl and set it aside, we will be using this later.

- Cover the main bowl of batter and let it sit for 10 minutes.
Part 4: Make the Wrapping
- Heat a frying pan on low flame. Add a small amount of oil and brush it throughout.

- Add one cup of batter from the covered bowl to the oiled pan.

- Now, be careful and spread the batter evenly to form a thin wrap. Keep the heat low.

- After a minute or two, use a spatula to carefully lift the wrap with a spoon and keep it aside.

- Now, Repeat this process to make 5-6 thin and soft chicken wrappers.

Part 5: Make a flour paste:
- Take 2 tablespoons of flour in a bowl. Add one cup of water to the flour and stir constantly.
- Mix them until you have a smooth, lump-free paste ready to work its magic.

We will use this paste to bind or seal the edges of the parotta in the next steps.
Part 6: Prepare the Chicken Rolls
- This time, you need to spread a chicken wrapper on a cutting board to get it ready to fill.
- Use a spoon to take a portion of the flavourful chicken mixture you prepared earlier and place it onto the wrap.

- Take the flour paste in a tablespoon and spread it over the edges of the parotta. This sticky layer will help seal the roll.

- Fold the bottom and top edges of the parotta inward over the filling. Continue the folding process to complete the roll.

- Dip the prepared chicken roll in the batter mixture you set aside earlier. Use a spoon to move the roll into the batter because we need to coat all the sides.

- Now, gently lift the roll and place it onto a plate filled with breadcrumbs.

- Sprinkle and press the bread crumbs onto the roll for an even and crunchy coating.

Repeat this process to prepare 5-6 deliciously crispy chicken rolls.
Step 7: Deep-fry the Rolls
- Add 1.5 cups of oil to a hot pan. Let the oil be hot to the touch.

- Carefully add the chicken rolls to the hot oil one by one.

- Once the rolls get a perfect golden color, they are crispy and fully cooked. Use a wire skimmer to lift the rolls out of the oil.

And that’s all! Serve the rolls on a plate.
What To Serve With Chicken Roll?
You can pair chicken rolls with side dishes such as yogurt dip, mint chutney, or tamarind sauce. For a more filling meal, you can add a fresh salad, mashed potato, spicy potato wedges, or sauteed garlic mushrooms.
Chef’s Tips
- Marinate the chicken for at least 30 minutes so the flavors fully penetrate the meat.
- Let the chicken filling cool before you place it in the rolls. This will prevent the parottas from becoming soggy.
- Make sure the oil is hot enough before frying. It will ensure a crispy and golden exterior.
- Press the breadcrumbs firmly on the rolls for an even and crunchy coating.
